Kwati is a traditional Nepali soup made from a mixture of various beans and lentils. Here's a basic recipe to get you started:
Ingredients:

A
mixture of nine types of beans and lentils (such as black-eyed beans, green
gram, chickpeas, kidney beans, etc.)

Water
for soaking and cooking
3.
Spices
(turmeric, cumin, fenugreek seeds, asafoetida)
4.
Salt
to taste
5.
Chopped
onions, garlic, and ginger
6.
Ghee
or oil for sautéing
7.
Chopped
cilantro for garnish
Instructions:
1. Wash
and soak the mixture of beans and lentils overnight or for about 8 hours.
2. Drain
the soaked beans and lentils and rinse them thoroughly.
3. In
a large pot, add the soaked beans and lentils along with enough water to cover
them. Bring to a boil and then let it simmer until they are tender. This might
take about an hour or more, depending on the type and size of the beans.
4. In
another pan, heat ghee or oil. Add chopped onions, garlic, and ginger. Sauté
until they are golden brown.
5. Add
the spices (turmeric, cumin, fenugreek seeds, and asafoetida) to the sautéed
mixture. Cook for a minute or two to release their flavors.
6. Add
this spice mixture to the pot of cooked beans and lentils. Stir well.
7. Add
salt to taste and continue to simmer the soup for another 15-20 minutes,
allowing the flavors to meld together.
8. Once
the soup is ready, garnish with chopped cilantro.
Note that there are variations of Kwati
and the choice of beans and lentils might vary. This is a basic recipe, and you
can adjust the spices and ingredients according to your taste preferences.
